Get 'Em While They're Hot Dad...They're Good


Almond Biscotti:
Ingredients:
1/4 cup finely chopped almonds
1/2 cup sugar
2 tablespoons margarine
4 egg whites, lightly beaten
2 teaspoons almond extract
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt

Directions:
Preheat oven to 375 degree F. Place almonds in a small baking pan. Bake 7 to 8 minutes until golden brown (watch carefully to avoid burning). Set aside.
Beat sugar and margarine in medium bowl with electric mixer until smooth. Add egg whites and almond extract; mix well. Combine flour, baking powder and salt in large bowl; mix well. Stir egg white mixture and almonds into flour mixture until well blended.

Spray two 9x5-inch loaf pans with non-stick cooking spray. Evenly divide dough between prepared pans. Spread dough evenly over bottoms of pans with wet fingertips. Bake 15 minutes or until knife inserted into centers comes out clean.
Remove from oven and turn onto cutting board. As soon as loaves are cool enough to handle, cut each into 16 (1/2-inch thick) slices. Place slices on baking sheets covered with parchment paper or sprayed with cooking spray. Bake 5 minutes; turn over. Bake 5 minutes more or until golden brown. Serve warm or cool completely and store in airtight container.

    I won't be online tonight...Nan and I are going to take our men out for a little R&R and maybe a little hanky panky later if they are good.
    I know you enjoyed your evening out yesterday with the family. Was Jer able to make it...I hope so?
    I baked the Banana Loaf this morning and boy is it good, Nan showed dad the recipes this morning. She called and said dad was on his way and sis told him to bring her a piece, I told you I have to always cook 2. Dad cut it before it cooled, he said Gilly was about to cry if he didn't get some and he didn't want him crying, I looked at my little man and he had cake all over him.

    The post on the guy they found alive is very touching, the human body can withstand a lot.
    Instead of it getting better in Haiti, it seem to be getting worse, The medical people need to stop running all over the place and stay in one spot, those people are scattered all over the place. There are going to be so much sickness coming from there over the years with all the mass graves, I don't believe they will find them all. It's so sad.
    A lot of people was able to get their adopted kids out sooner than expected, now that is a blessing.
    I just took the last batch of Biscotti's out, dad and Gilly made a bee-line to the kitchen.


    Hope the rest of your weekend be as enjoyable as the beginning...I know it will, the "ROCK" will see to it.
    You really made an old man happy, he just told me the Biscotti's taste like the ones his mama made.

    We had a wonderful evening with Steve and family. Jeremy was studying for an exam but Justin dropped in to say hello,so we took him along. He must have heard somehow that we were going to his favorite restaurant.
    We came back here and drank a bottle of wine made by our other grandson Jason.He is taking a wine making course since his college is in Niagara,which is in the heart of the grape growing and wine making district.He sent it over because he wanted our opinion.It wasn't too bad but it had a slight bitter after-taste.He needs to work on it some more.I believe he's getting a six week job on a cruise ship.That should be fun.He likes the ladies.

    Dad and Gilly are co-conspirators.They're going to have lots of fun together.I'm so glad you made the biscotti for him. That was the recipe I had in mind just for him.

    They found an eighty six year old woman and a twenty-one year old man alive under another building, after they dug out the guy I wrote about.This happened after they called off the search and rescue teams.A couple of teams kept going, regardless of orders.

    I want to know how that 86 yr old lady survived when younger healthier people succumbed to starvation and injuries.

    Sunday was a nice relaxing day with my hubby.Although it rained like a bitch.What kind of weather is that for January??We're usually trying to dig our way out of the house and plough a path out of the driveway.It's nice that the rain melted a lot of the snow but when it gets cold tonight, the rest will freeze solid.That's very dangerous.
